Patty Kolodziej started PK's Pastries as a side project. She makes Polish kolaczki cookies with a variety of fillings, both traditional and with her own spin.

The couple is particularly proud of their 10 varieties of kolaczki cookies and nut rolls for the holidays, as well as their cakes, pies, cupcakes and cake pops.

Spell it as you will -- kolaczki, kolachki, kolacky, kolace, kolachi, kolache or kolachke -- with slight variations, these pastries are one and the same. It's not clear where they originated.

These wonderful little pastry-cookies can be filled with a number of different jellied fruits (prunes, raspberries), but my favorite are stuffed with apricot jam.
